The Level 3 Award in Food Safety is the qualification required for anyone in a supervisory or management role within a food business, and for anyone responsible for writing, implementing or auditing the food safety procedures that others follow. This is not a refresher of Level 2. It is a substantially more demanding qualification that addresses the management systems, HACCP principles and supervisory responsibilities that a Level 2 course does not cover.

UK food law requires food business operators to have food safety management procedures in place based on HACCP principles. The Level 3 Award provides the understanding needed to design, implement and maintain those procedures, and to train and supervise others in following them.

For head chefs, sous chefs, kitchen managers, catering managers and food safety officers, the Level 3 qualification is the appropriate standard. Many food businesses also use it for senior-level compliance purposes, as evidence of systematic food safety management capability.

This fully online, self-paced course is regulated by Ofqual through QNUK and listed on the Regulated Qualifications Framework (RQF).

Food safety legislation and enforcement

  • The Food Safety Act 1990 and Food Hygiene (England) Regulations 2006 in depth
  • The role of Environmental Health Officers, local authorities and the Food Standards Agency
  • Enforcement mechanisms, including improvement notices, prohibition orders and emergency procedures
  • Due diligence as a legal defence: what it requires in practice
  • The Food Hygiene Rating Scheme (FHRS) and how supervisory training contributes to higher ratings

Microbiology and food contamination

  • Bacterial growth, multiplication and spore formation at management-level depth
  • Temperature control science, including the risk zone, chilling and freezing curves, and cook-cool processes
  • High-risk versus low-risk foods: microbiological risk profiling
  • Types of contamination, including microbiological, chemical, physical and allergenic
  • Cross-contamination routes and supervisory control measures

Food hazard analysis and HACCP

  • Codex Alimentarius and the 7 HACCP principles
  • Conducting a hazard analysis for a food business
  • Identifying Critical Control Points (CCPs) and Critical Limits
  • Establishing monitoring, corrective action, verification and record-keeping procedures
  • Implementing and auditing a HACCP-based food safety management system

Who Should Attend?

The Level 3 Award is appropriate for head chefs, sous chefs, chefs de partie, catering managers, kitchen supervisors, food safety officers, hospital catering managers, school meals supervisors, care home kitchen managers, and anyone responsible for writing or overseeing food safety management procedures. It is also relevant for business owners who act as the food safety lead for their operation.

For kitchen assistants, porters and front-of-house food handlers, the Level 2 Award in Food Safety for Catering is the appropriate starting qualification.
