Outdoor Food Safety | Level 2
Standard food safety training was written for kitchens. This course was written for the outdoors.
Food safety law applies wherever food is prepared, served or given to consumers, and that includes camp fires, bushcraft courses, forest school sessions, outdoor events and community activities. The legal requirements do not change because you are outside. However, the practical application of food safety in an outdoor environment is genuinely different from a commercial kitchen context, and a course designed for restaurant staff is not the most useful preparation for someone cooking over a fire in a woodland setting.
This Level 2 Outdoor Food Safety course has been developed specifically for those working with food in outdoor environments. It delivers the same accredited Level 2 qualification as our standard Level 2 Food Safety for Cateringcourse, meeting UK and EU legal requirements for food handlers in a non-supervisory role, with the content contextualised throughout for outdoor, wilderness and community settings.
This course is particularly well suited to:
- Forest school leaders and assistants
- Bushcraft instructors
- Park rangers and countryside education staff
- Scout, Guide, Beaver, Cub, Brownie and other youth group leaders
- Outdoor education centres
- Outdoor events catering teams
- Community food project volunteers
Please note that if you’re the owner/manager of a food business and are responsible for writing policies and procedure documents, you will need to attend the level 3 training course.
What You Will Learn
- UK food safety law as it applies to outdoor food handlers and informal catering settings
- The four Cs of food safety in an outdoor context: Cleaning, Cooking, Chilling and Cross-contamination
- Foodborne illness: causes, symptoms and prevention without a commercial kitchen infrastructure
- Temperature control outside: the particular risks of outdoor cooking, cooling and storage
- Managing personal hygiene without running water: hand cleaning methods, hygiene priorities and illness reporting
- Sourcing and storing food safely for outdoor use, including transportation and cool storage in the field
- Cross-contamination risks specific to outdoor preparation environments
- Allergen awareness for those serving food in informal or community settings
- Pest awareness in outdoor catering contexts
- Waste management and leaving a safe, clean food preparation area

Certificate:
- Certified by Chris Garland Training, successful candidates will receive the Outdoor Food Safety (Level 2) certificate.
Course duration:
- 7 guided learning hours with a further 3 hours self-study.

Time:
- This course runs from 09:00-17:00hrs. Please note the exact times for your course booking.
Test:
- Multiple choice test at the end of the course. You need to achieve 70% to pass.
Pre-requisites:
- We recommend that you have a reasonable understanding of English & maths (e.g. GCSE grade D/Level 1) before undertaking this course. This is not mandatory – please contact us to discuss any reasonable adjustments to accommodate your needs.
- All candidates should be at least 14 years old to undertake the qualification.
Candidates:
- All classroom courses have a minimum and maximum number of candidates that we can take on a course.
- Minimum: We need a minimum of 4 candidates on an open/scheduled course for the course to run. Click here for more details.
- Maximum: We are limited by the Health & Safety Executive, and (where applicable) by the Awarding Organisation, to a maximum of 12 candidates per instructor.
- Should you have more than 12 candidates to be trained, please contact us to discuss your training needs.
Geographical coverage:
- The qualification is available to candidates in the UK.
- The qualification can be delivered in other countries however candidates should be aware that the content was developed in accordance with current UK practice, protocols & guidance.

- If you have chosen the blended learning option, you’ll need to attend our training centre to complete the face to face element of the course. Where a private booking has been made for multiple candidates using the blended learning option, please contact us to discuss holding the practical element of the course at your venue.
